A food journey throughout Italy – The Royal Exchange launches Trattoria menu

Sauterelle, the modern European restaurant in The Royal Exchange, has launched a new menu in celebration of the varying cuisines throughout Italy.  Each week, Executive Head Chef Stefano Leone and Head Chef Piero Leone will choose a hero dish that represents a specific region of Italy using expertly sourced ingredients.

Designed as a road trip through their homeland, the chefs have designed a menu that will bring diners an authentic taste of Italy’s various gastronomic regions, with delicate, flavourful plates inspired by both chefs’ upbringing in Rome and Modena.  Examples include a hearty Risotto Allo Zafferano (Saffron Risotto), an authentic recipe from Lombardia, much appreciated in the North of Italy for its simplicity and distinctive saffron flavour; renowned dishes Lasagna and Tagliatelle alla Bolognese that originate from the Emilia-Romagna region; and Trofie al Pesto representing the area of Liguria.  Additional regions of Puglia, Veneto, Campania, Sardegna and Abruzzo are also celebrated – to name a few.

The Royal Exchange Trattoria menu will be available for 12 weeks and paired with authentic Italian wines and aperitifs.  Dishes will change on a weekly basis and will be announced via Sauterelle’s social media channels @REXLondon.
