Angler restaurant launch Dry January pairing menu in collaboration with Seedlip

Michelin-starred seafood restaurant, Angler, is to launch a non-alcoholic pairing menu for Dry January 2019. Tapping into the growing acceptance that soft drinks need to be as interesting and complex as the alcoholic offering, with an estimated five million taking part in Dry January last year, Executive Chef Gary Foulkes has worked with non-alcoholic spirits brand Seedlip to curate an exclusive pairing menu.

A three-course offering, the starter, main and dessert have all been thoughtfully paired with a Seedlip cocktail. A starter of Cornish mackerel tartare, oyster cream, apple and shiso, for instance, will be paired with a sweet and sour short drink, featuring Seedlip Garden 108, shiso vinegar, lime juice and apple juice. To follow, a main of Cornish red gurnard, potimarron, spiced pumpkin, buttermilk will be paired with a refreshing long drink made from Homemade pumpkin juice and infused with ginger vinegar, Seedlip spice 94, and shaken with egg. To finish, a dessert of Yorkshire rhubarb tart, Brillat-Savarin cream, stem ginger, and basil will be paired with a cocktail made from Rhubarb juice, baby Greek basil syrup and Seedlip Grove 42, topped with a light elderflower and rhubarb foam. The menu launches on 7th January and will be available until 15th February, priced at £50.
