Newest to the collection is Odysea’s Carob Molasses, a rich, treacly molasses with dark, chocolatey undertones. Dating back to ancient times, Carob Molasses is a great substitute for cocoa and chocolate, as well as a sweet alternative to muscovado and dark brown sugar. Made from 100% concentrated carob juice, the molasses is made by pulping carob pods and extracting the juice, before reducing the liquid, turning it to a thick, treacly syrup.
Odysea’s Date Molasses is made using semi-soft dates. Only the highest quality dates are used, lending a full, treacly flavour with a honeyed sweetness. Date Molasses adds a depth of flavour and complexity to savoury dishes, perfect glazed over BBQ meats, used to dress roasted vegetables or baked into indulgent puddings.
An ancient sweetener called “Petimezi” in Greek, Odysea’s Organic Grape Molasses is an intense, sweetly aromatic syrup. Made from cold-extracted grapes grown in the Messinia region of Greece, this versatile product has notes of quince, wine and dried fruits with a gentle viscosity. Odysea’s Pomegranate Molasses is made from a select pomegranate variety known for yielding large, dark burgundy fruit, harvested from late August. It’s completely natural and made by reducing 100% pomegranate juice without the addition of sugars or preservatives. A bright, zippy tartness gives way to a sharp fruity kick, the deep ruby-coloured syrup gives a vibrant twist to a classic cocktail or marinade.
