Created with its health-conscious but often time-poor customers in mind, each soup serves two people and offers a delicious, lighter lunch option that is quick to prepare. Frozen from fresh, the soups are low-fat and created to recipes developed by Mindful Chef Chefs with no refined sugars, gluten or dairy. They can be stored in the fridge or freezer to ensure a nutritious lunch is always available within minutes.
The four new soups have launched to customers nationwide and are priced from £3.45, for a two-person portion. Indonesian Chicken, Green Minestrone, Rustic Chicken and Vegetable and Tomato, Lentil and Basil ensure there’s something to suit all tastes whilst Mindful Chef’s healthy twist helps customers feel good and energised enough to power through until dinner. The soups can either be added on to customers’ regular recipe box order or purchased individually from the Mindful Chef website.

Indonesian Chicken – A fragrant and filling soup of free-range British chicken, julienned red peppers and vermicelli rice noodles. Lemongrass, kaffir lime leaves, turmeric and red chilli add spice for a satisfying, flavour-filled bowl.
Green Minestrone – An Italian classic, laden with veg. Created with summer lunches in mind, this soup is high in fibre and protein and bursting with peas, edamame, butter beans and kale.
Rustic Chicken & Vegetable – A Provence-inspired recipe of juicy free-range British chicken, sun-ripened tomatoes, olives and herbs alongside leek, red pepper, courgette and spinach. A light, sumer veg-packed soup that is high protein and low-fat.
Tomato, Lentil & Basil – This all-time classic soup of juicy and sweet tomatoes, filling red lentils and fragrant basil is high in fibre and low in fat, making for a healthy and delicious option.
