Shilpa Dandekar Brings Vibrant New Indian Flavours to Party Season

2018 has seen Shilpa Dandekar rise to prominence as one of London’s leading female Indian Head Chefs. From being personally selected by Raymond Blanc to take the lead in the kitchen of the first Brasserie Blanc, to opening her first solo eatery, Fulham’s Pure Indian Cooking in 2015, she has become one of the city’s boldest voices in contemporary Indian fine dining.

Her menus pair the warmth of traditional Indian fare with the creative zest of her European interests; the latest of her ideas coming to life in Pure Indian Cooking’s new menu designed for the festive season and perfect for larger gatherings as well as intimate dinners away from London’s chill evenings.

Evocative and delicious, her Christmas menu includes Candied citrus peel-crusted scallops, Chestnut & sultana stuffed tandoori chicken breast with pistachio sauce, Sliced potatoes cooked with chilli, cumin and caraway seeds and Sprouts tossed in mustard seeds with curry leaves and desiccated coconut. Dessert offers the Gulab Jamun with mulled wine sauce and traditional vanilla ice cream.

Shilpa says “This is the time of year when everyone is looking for something delicious to eat; I want to challenge people’s ideas of Christmas food with this menu – surprise them and delight them.”
